Sausage and Peppers Pasta Skillet

Ingredients
- 12 oz penne or rigatoni
- 1 lb Italian sausage, sliced into rounds
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 3 cloves garlic, minced
- 24 oz marinara sauce
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt, plus more for pasta water
- 1/4 teaspoon black pepper
- Grated Parmesan cheese, for serving
Instructions
- 1Cook the penne in salted boiling water until al dente, about 10 to 11 minutes, then drain and set aside.
- 2Heat the olive oil in a large skillet over medium heat and brown the sausage slices for 5 to 6 minutes until cooked through, then remove and set aside.
- 3In the same skillet, saute the bell peppers and onion for 5 to 6 minutes until softened, then add the garlic and cook for 30 seconds.
- 4Return the sausage to the skillet along with the marinara sauce, oregano, salt, and pepper, and simmer for 8 minutes.
- 5Add the cooked penne to the skillet and toss to coat evenly in the sauce.
- 6Serve hot topped with grated Parmesan.
