Sausage and Peppers Pasta Skillet

Ingredients

  • 12 oz penne or rigatoni
  • 1 lb Italian sausage, sliced into rounds
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 24 oz marinara sauce
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt, plus more for pasta water
  • 1/4 teaspoon black pepper
  • Grated Parmesan cheese, for serving

Instructions

  1. 1Cook the penne in salted boiling water until al dente, about 10 to 11 minutes, then drain and set aside.
  2. 2Heat the olive oil in a large skillet over medium heat and brown the sausage slices for 5 to 6 minutes until cooked through, then remove and set aside.
  3. 3In the same skillet, saute the bell peppers and onion for 5 to 6 minutes until softened, then add the garlic and cook for 30 seconds.
  4. 4Return the sausage to the skillet along with the marinara sauce, oregano, salt, and pepper, and simmer for 8 minutes.
  5. 5Add the cooked penne to the skillet and toss to coat evenly in the sauce.
  6. 6Serve hot topped with grated Parmesan.
