Pad Thai-Style Stir-Fried Noodles

Ingredients

  • 8 oz flat rice noodles
  • 2 tablespoons vegetable oil
  • 2 eggs, lightly beaten
  • 8 oz chicken breast or shrimp, cut into bite-size pieces
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 2 green onions, sliced
  • 3 tablespoons fish sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons fresh lime juice, plus lime wedges for serving
  • 1 tablespoon tamarind paste or rice vinegar
  • 1/4 cup crushed peanuts
  • Chopped fresh cilantro, for garnish

Instructions

  1. 1Soak the flat rice noodles in warm water for 20 to 30 minutes until pliable but still firm, then drain well.
  2. 2Whisk together the fish sauce, brown sugar, lime juice, and tamarind paste in a small bowl to make the sauce.
  3. 3Heat 1 tablespoon of oil in a large skillet or wok over high heat, pour in the beaten eggs, and scramble briefly, then push to one side.
  4. 4Add the remaining oil and the chicken or shrimp to the skillet and cook for 3 to 4 minutes until cooked through.
  5. 5Add the garlic and cook for 30 seconds, then add the drained noodles and the sauce, tossing constantly for 2 to 3 minutes until the noodles are tender and evenly coated.
  6. 6Fold in the bean sprouts and green onions and toss for 1 more minute.
  7. 7Serve topped with crushed peanuts, cilantro, and lime wedges on the side.
