Lemon Orzo with Feta and Herbs

Ingredients
- 1 1/2 cups orzo
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 cups vegetable or chicken broth
- Zest and juice of 1 lemon
- 3/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh dill or mint
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- 1Heat the olive oil in a medium saucepan over medium heat and toast the orzo for 2 minutes, stirring often, until lightly golden.
- 2Add the garlic and cook for 30 seconds until fragrant.
- 3Pour in the broth, bring to a boil, then reduce the heat and simmer for 9 to 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
- 4Remove from the heat and stir in the lemon zest and juice, salt, and pepper.
- 5Fold in the feta, parsley, and dill or mint, reserving a little of each for garnish.
- 6Serve warm or at room temperature, topped with the reserved feta and herbs.
