Kielbasa and Penne Skillet

Ingredients

  • 12 oz penne
  • 1 lb kielbasa sausage, sliced into rounds
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 14 oz canned diced tomatoes
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt, plus more for pasta water
  • 1/4 teaspoon black pepper
  • Grated Parmesan cheese, for serving

Instructions

  1. 1Cook the penne in salted boiling water until al dente, about 10 to 11 minutes, then drain and set aside.
  2. 2Heat the olive oil in a large skillet over medium-high heat and brown the kielbasa slices for 4 to 5 minutes, then remove and set aside.
  3. 3In the same skillet, saute the onion and bell pepper for 4 to 5 minutes until softened, then add the garlic and cook for 30 seconds.
  4. 4Stir in the diced tomatoes, smoked paprika, oregano, salt, and pepper, and simmer for 5 minutes.
  5. 5Return the kielbasa to the skillet along with the cooked penne, tossing well to combine and heat through.
  6. 6Serve hot topped with grated Parmesan.
