Kielbasa and Penne Skillet

Ingredients
- 12 oz penne
- 1 lb kielbasa sausage, sliced into rounds
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 14 oz canned diced tomatoes
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt, plus more for pasta water
- 1/4 teaspoon black pepper
- Grated Parmesan cheese, for serving
Instructions
- 1Cook the penne in salted boiling water until al dente, about 10 to 11 minutes, then drain and set aside.
- 2Heat the olive oil in a large skillet over medium-high heat and brown the kielbasa slices for 4 to 5 minutes, then remove and set aside.
- 3In the same skillet, saute the onion and bell pepper for 4 to 5 minutes until softened, then add the garlic and cook for 30 seconds.
- 4Stir in the diced tomatoes, smoked paprika, oregano, salt, and pepper, and simmer for 5 minutes.
- 5Return the kielbasa to the skillet along with the cooked penne, tossing well to combine and heat through.
- 6Serve hot topped with grated Parmesan.
