Creamy Cajun Chicken Pasta

Ingredients
- 12 oz penne
- 1 lb chicken breast, cut into strips
- 2 teaspoons Cajun seasoning, divided
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup chicken broth
- 3/4 cup grated Parmesan cheese, plus more for serving
- 1/2 teaspoon salt, plus more for pasta water
- 1/4 teaspoon black pepper
- Chopped fresh parsley, for garnish
Instructions
- 1Cook the penne in salted boiling water until al dente, about 10 to 11 minutes, reserving 1/2 cup pasta water before draining.
- 2Toss the chicken strips with 1 teaspoon of the Cajun seasoning, then sear in the olive oil in a large skillet over medium-high heat for 4 to 5 minutes per side until cooked through; remove and set aside.
- 3In the same skillet, saute the bell pepper for 3 minutes until slightly softened, then add the garlic and cook for 30 seconds.
- 4Pour in the heavy cream and chicken broth, along with the remaining Cajun seasoning, and simmer for 3 to 4 minutes until slightly thickened.
- 5Whisk in the Parmesan, salt, and pepper, then return the chicken to the skillet along with the drained penne, tossing well and adjusting the sauce with reserved pasta water as needed.
- 6Garnish with parsley and extra Parmesan before serving.
