Strawberry Shortcake

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar, plus 2 tbsp for the strawberries
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup heavy cream, plus more for brushing
  • 4 cups sliced strawberries
  • 1 cup whipped cream, for topping

Instructions

  1. 1Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. 2Whisk together the flour, 1/4 cup sugar, baking powder, and salt.
  3. 3Cut in the cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs.
  4. 4Stir in the heavy cream just until a shaggy dough forms.
  5. 5Pat the dough into a circle about 3/4 inch thick and cut into 6 wedges or rounds, then place on the sheet and brush with a little extra cream.
  6. 6Bake for 12 to 15 minutes, until golden brown.
  7. 7Meanwhile, toss the sliced strawberries with the remaining 2 tablespoons of sugar and let sit to release their juices.
  8. 8Split the warm shortcakes, fill with strawberries and whipped cream, and serve immediately.
