The Story Behind It

The Tale of S'mores Bars

Story updated

S'mores originated as a campfire treat, with the earliest known printed recipe appearing in a 1927 Girl Scout guidebook under the name 'Some Mores.' Bar versions are a modern adaptation that bakes the graham cracker, chocolate, and marshmallow combination into a shareable dessert without a campfire.

Ingredients

Scale:· 16 servings
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 cups chocolate chips
  • 2 cups mini marshmallows
  • 1/2 cup crushed graham crackers, for topping

Instructions

  1. 1Preheat the oven to 350°F and line a 9x9-inch pan with parchment paper.
  2. 2Mix the graham cracker crumbs, melted butter, and sugar, then press into the bottom of the pan to form the crust.
  3. 3Bake the crust for 8 minutes, then remove from the oven.
  4. 4Sprinkle the chocolate chips evenly over the warm crust and let sit for a minute to soften, then spread into an even layer.
  5. 5Scatter the mini marshmallows and crushed graham crackers over the chocolate.
  6. 6Bake for another 8 to 10 minutes, until the marshmallows are puffed and golden.
  7. 7Cool completely before lifting out and cutting into squares.
