Simple Tiramisu

Ingredients

  • 1 1/2 cups brewed espresso or strong coffee, cooled
  • 2 tbsp cocoa powder, plus more for dusting
  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 16 oz mascarpone cheese, softened
  • 1 cup heavy cream, whipped to soft peaks
  • 24 ladyfinger cookies

Instructions

  1. 1Pour the cooled coffee into a shallow dish for dipping.
  2. 2Whisk the egg yolks and sugar together in a heatproof bowl, then set over a pot of gently simmering water and whisk constantly for about 5 minutes, until thickened and pale.
  3. 3Remove from heat and let cool slightly, then beat in the mascarpone until smooth.
  4. 4Gently fold the whipped cream into the mascarpone mixture until no streaks remain.
  5. 5Quickly dip each ladyfinger into the coffee (do not soak them, just a quick dunk) and arrange a layer in the bottom of a 9x9-inch dish.
  6. 6Spread half of the mascarpone mixture over the ladyfingers, then repeat with a second layer of dipped ladyfingers and the remaining mascarpone mixture.
  7. 7Dust the top generously with cocoa powder.
  8. 8Cover and refrigerate for at least 4 hours, or overnight, before slicing and serving.
