Simple Chocolate Mousse

Ingredients

  • 8 oz semisweet chocolate, chopped
  • 2 cups heavy cream, cold
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. 1Melt the chopped chocolate in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth, then let cool slightly.
  2. 2Whip 1 cup of the heavy cream with the sugar until soft peaks form.
  3. 3Fold about a third of the whipped cream into the melted chocolate to lighten it, then gently fold in the rest along with the vanilla extract and salt.
  4. 4Whip the remaining 1 cup of cream to soft peaks and fold it into the chocolate mixture until no streaks remain.
  5. 5Divide the mousse among serving cups.
  6. 6Chill in the refrigerator for at least 2 hours before serving.
