Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 3 (8 oz) blocks cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/3 cup sour cream
Instructions
- 1Preheat the oven to 325°F and grease a 9-inch springform pan.
- 2Mix the graham cracker crumbs with the melted butter and press firmly into the bottom of the pan to form the crust.
- 3Beat the cream cheese and sugar together until smooth and no lumps remain.
- 4Beat in the eggs one at a time on low speed, mixing just until combined after each addition.
- 5Mix in the vanilla extract and sour cream until smooth.
- 6Pour the filling over the crust and smooth the top.
- 7Bake for 45 to 50 minutes, until the edges are set but the center still jiggles slightly.
- 8Turn off the oven and let the cheesecake cool inside with the door cracked for an hour, then refrigerate for at least 4 hours before slicing.
