No-Water-Bath Cheesecake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 3 (8 oz) blocks cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup sour cream

Instructions

  1. 1Preheat the oven to 325°F and grease a 9-inch springform pan.
  2. 2Mix the graham cracker crumbs with the melted butter and press firmly into the bottom of the pan to form the crust.
  3. 3Beat the cream cheese and sugar together until smooth and no lumps remain.
  4. 4Beat in the eggs one at a time on low speed, mixing just until combined after each addition.
  5. 5Mix in the vanilla extract and sour cream until smooth.
  6. 6Pour the filling over the crust and smooth the top.
  7. 7Bake for 45 to 50 minutes, until the edges are set but the center still jiggles slightly.
  8. 8Turn off the oven and let the cheesecake cool inside with the door cracked for an hour, then refrigerate for at least 4 hours before slicing.
