The Story Behind It

The Tale of Molten Chocolate Mug Cake

Story updated

Molten chocolate cake (lava cake) is often credited to French chef Jean-Georges Vongerichten in the 1980s, who discovered an underbaked cake center created a gooey effect. The single-serving microwave mug cake version is a much more recent 2000s-era home-cooking innovation for quick, individual desserts.

Ingredients

Scale:· 1 serving
  • 4 tbsp all-purpose flour
  • 4 tbsp granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • 1/8 tsp baking powder
  • Pinch of salt
  • 3 tbsp milk
  • 2 tbsp vegetable oil
  • 1/4 tsp vanilla extract
  • 1 tbsp chocolate chips

Instructions

  1. 1In a large microwave-safe mug, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  2. 2Add the milk, oil, and vanilla extract, and stir until smooth with no dry lumps.
  3. 3Drop the chocolate chips into the center of the batter and push them down slightly.
  4. 4Microwave on high for 70 to 90 seconds, until the cake has risen and the top looks mostly set (it will continue to firm up slightly as it cools).
  5. 5Let the mug cake sit for a minute before eating, as the center will be very hot and gooey.
