The Story Behind It

The Tale of Lemon Bars

Story updated

Lemon bars are an American dessert, with recipes for lemon-curd-topped shortbread bars appearing in community and church cookbooks by the mid-20th century, particularly gaining popularity in the 1960s and '70s as a simpler alternative to lemon meringue pie.

Ingredients

Scale:· 16 servings
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar, plus more for dusting
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar

  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp all-purpose flour
  • 1/4 tsp baking powder

Instructions

  1. 1Preheat the oven to 350°F and line an 8x8-inch pan with parchment paper.
  2. 2Mix the 1 cup of flour, powdered sugar, and softened butter until crumbly, then press evenly into the bottom of the pan.
  3. 3Bake the crust for 15 to 18 minutes, until lightly golden.
  4. 4Meanwhile, whisk together the granulated sugar, eggs, lemon juice, lemon zest, 2 tablespoons of flour, and baking powder until smooth.
