The Tale of Banana Bread
Story updated
Banana bread became popular in the U.S. during the Great Depression of the 1930s, when frugal bakers looked for ways to use overripe bananas rather than waste them, aided by the growing availability of baking soda and baking powder. It remains one of America's most enduring quick breads.
Ingredients
Scale:· 10 servings
- 3 very ripe bananas, mashed
- 1/3 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cups all-purpose flour
Instructions
- 1Preheat the oven to 350°F and grease a 9x5-inch loaf pan.
- 2Mash the bananas in a large bowl, then stir in the melted butter.
- 3Mix in the sugar, egg, and vanilla extract until well combined.
- 4Sprinkle the baking soda and salt over the mixture and stir in, then fold in the flour just until no dry streaks remain (do not overmix the batter).
- 5Pour the batter into the prepared pan and smooth the top.
- 6Bake for 50 to 55 minutes, until a toothpick inserted in the center comes out clean.
- 7Cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
