Chicken Skewers with Peppers and Onions

Ingredients
- 1.5 lbs boneless, skinless chicken breast, cut into cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- wooden or metal skewers
Instructions
- 1If using wooden skewers, soak them in water for 20 minutes to prevent burning.
- 2Whisk together the olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.
- 3Toss the chicken cubes in the marinade and let sit for at least 15 minutes.
- 4Thread the chicken, peppers, and onion onto the skewers, alternating pieces.
- 5Grill or broil the skewers for 10-12 minutes, turning occasionally, until the chicken reaches 165°F and is lightly charred.
- 6Serve hot, drizzled with any remaining marinade juices from the pan.
