The Story Behind It

The Tale of Chicken Shawarma-Style Wraps

Story updated

Shawarma developed in the Ottoman Empire (present-day Turkey) in the 19th century from vertically roasted, spiced meat, closely related to Greek gyro and Mexican al pastor. It spread throughout the Middle East and became a global street-food favorite, with home versions using wraps instead of a rotisserie.

Ingredients

Scale:· 4 servings
  • 1.5 lbs boneless, skinless chicken thighs, sliced thin

  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 4 large flatbreads or pita
  • 1/2 cup plain yogurt sauce
  • shredded lettuce, tomato, and pickles, for serving

Instructions

  1. 1Combine the olive oil, cumin, coriander, paprika, turmeric, cinnamon, garlic, and lemon juice in a bowl to make the marinade.
