Chicken Parmesan

Ingredients

  • 4 boneless, skinless chicken breasts, pounded thin
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1.5 cups Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup olive oil, for frying
  • 2 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese
  • salt and pepper, to taste
  • 2 tbsp fresh basil, chopped

Instructions

  1. 1Preheat the oven to 400°F and set up a breading station with flour, beaten eggs, and breadcrumbs mixed with Parmesan.
  2. 2Season the chicken breasts with salt and pepper, then dredge each in flour, dip in egg, and coat in the breadcrumb mixture.
  3. 3Heat the olive oil in a large skillet over medium-high heat and fry the breaded chicken for 3-4 minutes per side until golden brown.
  4. 4Transfer the chicken to a baking dish and spoon marinara sauce over each piece.
  5. 5Top with shredded mozzarella and bake for 15-20 minutes until the cheese is melted and bubbly and the chicken reaches 165°F.
  6. 6Garnish with fresh basil and serve over pasta or with a side salad.
