Grilled Chicken Breasts with Chimichurri

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup fresh parsley, finely chopped
- 3 cloves garlic, minced
- 2 tbsp red wine vinegar
- 1/2 cup olive oil (for chimichurri)
- 1/2 tsp red pepper flakes
Instructions
- 1Preheat a grill or grill pan to medium-high heat.
- 2Pound the chicken breasts to an even thickness, then rub with olive oil, salt, and pepper.
- 3Grill the chicken for 6-7 minutes per side, until well marked and the internal temperature reaches 165°F.
- 4While the chicken cooks, combine the parsley, garlic, red wine vinegar, olive oil, and red pepper flakes in a bowl to make the chimichurri.
- 5Let the chicken rest for 5 minutes, then slice and spoon the chimichurri generously over the top.
