Chicken Fried Rice

Ingredients

  • 1 lb boneless, skinless chicken breast, diced
  • 4 cups cooked and chilled white rice
  • 3 tbsp vegetable oil
  • 2 eggs, beaten
  • 1 cup frozen peas and carrots
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tsp sesame oil

Instructions

  1. 1Heat 1 tablespoon of oil in a large skillet or wok over high heat and cook the chicken for 5-6 minutes until cooked through, then remove to a plate.
  2. 2Add a bit more oil and scramble the eggs in the same pan, then remove and set aside with the chicken.
  3. 3Add the remaining oil and stir-fry the peas, carrots, and garlic for 2 minutes until fragrant.
  4. 4Add the chilled rice, breaking up any clumps, and stir-fry for 3-4 minutes until heated through.
  5. 5Return the chicken and eggs to the pan, pour in the soy sauce, and toss everything together.
  6. 6Stir in the green onions and sesame oil, then serve hot.
