The Tale of Chicken Fajitas
Story updated
Fajitas originated among Mexican ranch hands (vaqueros) in South Texas, who grilled tough but flavorful skirt steak over open fires; the term comes from faja, meaning 'strip' or 'belt.' Chicken fajitas are a later variation, and the sizzling tableside presentation became popular through Tex-Mex restaurants in the 1970s and '80s.
