Crispy Chicken Tacos

Ingredients

  • 1.5 lbs ground chicken
  • 1 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • 1/3 cup water
  • 8 crunchy taco shells
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1 tomato, diced
  • sour cream and salsa, for serving

Instructions

  1. 1Heat the olive oil in a skillet over medium heat and cook the ground chicken, breaking it apart, for 6-8 minutes until browned and no longer pink.
  2. 2Drain any excess liquid, then stir in the taco seasoning and water.
  3. 3Simmer for 3-4 minutes until the mixture thickens slightly and coats the chicken.
  4. 4Warm the taco shells in the oven according to the package instructions.
  5. 5Fill each shell with the seasoned chicken, then top with lettuce, cheese, and tomato.
  6. 6Serve with sour cream and salsa on the side.
