The Tale of Chicken Burrito Bowls

Story updated

Burrito bowls are a modern American invention, essentially a deconstructed burrito served without the tortilla, popularized largely by fast-casual chains like Chipotle since the late 1990s and 2000s as a customizable, lower-carb alternative.

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tbsp taco seasoning

  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup shredded cheese
  • lime wedges, for serving

Instructions

  1. 1Toss the chicken thighs with olive oil and taco seasoning.
  2. 2Heat a skillet over medium-high heat and cook the chicken for 6-7 minutes per side until cooked through to 165°F.
