The Tale of Sweet Potato Breakfast Hash
Story updated
Hash-style dishes grew from frugal American cooking that fried chopped leftovers together, and sweet potato versions reflect the vegetable's deep roots in Southern and Indigenous American cuisine, where it has been cultivated for centuries. The combination gained popularity recently amid interest in whole-food, gluten-free breakfasts.
Ingredients
Scale:· 4 servings
- 2 tbsp olive oil
- 2 medium sweet potatoes, diced small
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 4 large eggs
- 2 tbsp chopped green onion
Instructions
- 1Heat the olive oil in a large skillet over medium heat and add the diced sweet potatoes in an even layer.
- 2Cover and cook, stirring occasionally, until the sweet potatoes begin to soften, about 8 minutes.
- 3Uncover, add the onion and bell pepper, and continue cooking until everything is tender and lightly browned, about 8 more minutes. Season with smoked paprika, salt, and pepper.
- 4Make four small wells in the hash and crack an egg into each.
- 5Cover the pan and cook until the egg whites are set but the yolks are still soft, about 4 minutes.
- 6Sprinkle with green onion and serve straight from the skillet.
