The Story Behind It

The Tale of Steel-Cut Oats with Apples and Cinnamon

Story updated

Steel-cut oats are a less-processed form of the oat, a grain cultivated in Europe for millennia and especially central to Scottish cuisine. Pairing oats with apples and warm spices like cinnamon reflects a long tradition of stretching a humble grain into a comforting, naturally sweetened breakfast.

Ingredients

Scale:· 4 servings
  • 1 cup steel-cut oats
  • 3 1/2 cups water or milk
  • Pinch of salt
  • 1 apple, peeled and diced
  • 1 tsp ground cinnamon
  • 2 tbsp brown sugar or maple syrup
  • 2 tbsp chopped walnuts, optional

Instructions

  1. 1Bring the water or milk to a boil in a medium saucepan.
  2. 2Stir in the steel-cut oats and salt, then reduce the heat to a gentle simmer.
  3. 3Cook uncovered, stirring occasionally, for about 20 minutes, until the oats are tender but still slightly chewy.
  4. 4Stir in the diced apple and cinnamon during the last 5 minutes of cooking so the apple softens slightly.
  5. 5Remove from the heat and stir in the brown sugar.
  6. 6Spoon into bowls and top with chopped walnuts before serving.
