Loaded Breakfast Skillet Hash

Ingredients

  • 1 lb baby potatoes, diced small
  • 2 tbsp olive oil
  • 1/2 lb breakfast sausage, casings removed
  • 1/2 onion, diced
  • 1/2 bell pepper, diced
  • Salt and pepper, to taste
  • 4 large eggs
  • 1/2 cup shredded cheese
  • 2 tbsp chopped chives

Instructions

  1. 1Heat the olive oil in a large skillet over medium heat and add the diced potatoes, spreading them into a single layer.
  2. 2Cook, stirring occasionally, until the potatoes are golden and fork-tender, about 12 minutes.
  3. 3Push the potatoes to one side, add the sausage to the empty space, and cook, breaking it apart, until browned, about 6 minutes.
  4. 4Stir in the onion and bell pepper and cook everything together until the vegetables soften, about 4 minutes. Season with salt and pepper.
  5. 5Make four small wells in the hash, crack an egg into each, cover the pan, and cook until the egg whites are set but the yolks are still runny, about 4 minutes.
  6. 6Sprinkle with cheese and chives, then serve straight from the skillet.
