The Story Behind It

The Tale of Homemade Breakfast Sausage Patties

Story updated

Breakfast sausage traditions trace back to European sausage-making, but the sage-and-pepper-seasoned American breakfast patty developed as settlers adapted Old World recipes with local pork and spices. It became a standard diner and home-breakfast item by the early 20th century.

Ingredients

Scale:· 6 servings
  • 1 lb ground pork
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes
  • 1 tbsp brown sugar
  • 1 tbsp vegetable oil, for cooking

Instructions

  1. 1In a large bowl, combine the ground pork with salt, pepper, sage, thyme, red pepper flakes, and brown sugar, mixing gently with your hands until evenly distributed.
  2. 2Divide the mixture into 6 equal portions and shape each into a flat patty about 1/2 inch thick.
  3. 3Heat the oil in a skillet over medium heat.
  4. 4Cook the patties for 4 to 5 minutes per side, until browned and cooked through to an internal temperature of 160°F (71°C).
  5. 5Transfer to a paper-towel-lined plate to drain briefly before serving.
