Glazed Yeast Doughnuts

Ingredients

  • 3/4 cup warm milk
  • 2 1/4 tsp active dry yeast
  • 1/4 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup melted butter
  • 1/2 tsp salt
  • 3 cups all-purpose flour
  • Vegetable oil, for frying
  • 1 1/2 cups powdered sugar
  • 3 tbsp milk, for glaze
  • 1/2 tsp vanilla extract

Instructions

  1. 1Stir the yeast and a pinch of the sugar into the warm milk and let sit until foamy, about 5 minutes.
  2. 2In a large bowl or stand mixer, combine the yeast mixture with the remaining sugar, egg, egg yolk, melted butter, and salt, then gradually mix in the flour until a soft, slightly sticky dough forms.
  3. 3Knead the dough for about 6 minutes until smooth and elastic, then place it in a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour.
  4. 4Roll the dough out on a floured surface to about 1/2 inch thick and cut into rounds with a doughnut cutter. Let the cut doughnuts rise again, covered, for about 30 minutes, until puffy.
  5. 5Heat about 2 inches of oil in a deep pot to 350°F (175°C) and fry the doughnuts in batches, about 60 to 90 seconds per side, until golden brown. Drain on a wire rack or paper towels.
  6. 6Whisk the powdered sugar, milk, and vanilla together to make a smooth glaze, then dip the warm doughnuts in the glaze and let set before serving.
