Breakfast Fried Rice

Ingredients

  • 3 tbsp vegetable oil
  • 4 slices bacon, chopped
  • 3 cups cold cooked rice
  • 1 cup frozen peas and carrots
  • 3 large eggs, beaten
  • 3 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 green onions, sliced

Instructions

  1. 1Heat 1 tablespoon of the oil in a large skillet or wok over medium heat and cook the bacon until crisp, about 5 minutes. Remove and set aside, leaving the fat in the pan.
  2. 2Add the remaining oil to the pan, then add the cold rice, breaking up any clumps, and stir-fry until it starts to crisp in spots, about 4 minutes.
  3. 3Add the peas and carrots and cook for 2 minutes, until heated through.
  4. 4Push the rice to one side of the pan, pour the beaten eggs into the empty space, and scramble until just set, then mix into the rice.
  5. 5Stir in the soy sauce and sesame oil, tossing until everything is evenly coated.
  6. 6Fold the crispy bacon back in, sprinkle with green onions, and serve hot.
