Ingredients
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/4 cups milk
- 2 tbsp melted butter, plus more for the pan
- 1 tbsp sugar
- Pinch of salt
- 1 tsp vanilla extract
- Fillings such as fruit, Nutella, or jam, for serving
Instructions
- 1Whisk the flour, eggs, milk, melted butter, sugar, salt, and vanilla together until completely smooth, or blend briefly in a blender for the smoothest results.
- 2Let the batter rest for at least 15 minutes at room temperature; this relaxes the gluten and helps the crepes cook up tender rather than rubbery.
- 3Heat a nonstick or crepe pan over medium heat and brush lightly with butter.
- 4Pour a thin layer of batter into the center of the pan and immediately swirl and tilt the pan so the batter coats the bottom in a thin, even circle.
- 5Cook until the edges look dry and lightly golden and lift easily, about 1 to 2 minutes, then flip with a thin spatula and cook the second side for about 30 seconds.
- 6Stack the finished crepes on a plate, filling and folding or rolling each one as desired before serving.
