The Tale of Avocado Toast with Fried Egg
Story updated
Avocado toast has roots in Australian cafe culture of the 1990s and early 2000s, with Bill Granger's Sydney restaurant often credited for popularizing smashed avocado on toast. It became a global brunch phenomenon in the 2010s, with a fried egg becoming a common protein-boosting addition.
Ingredients

- 2 thick slices sourdough or whole-grain bread
- 1 ripe avocado
- 1 tbsp lemon juice
- Salt and pepper, to taste
- 1 tbsp butter or oil
- 2 large eggs
- Red pepper flakes, for garnish
Instructions
- 1Toast the bread slices until golden and crisp.
- 2Mash the avocado in a bowl with the lemon juice, salt, and pepper until mostly smooth with a few chunks remaining.
