The Story Behind It

The Tale of Herb Focaccia Rolls

Story updated

These rolls adapt Liguria's ancient focaccia tradition—flatbread baked with olive oil, dimpled by hand, and topped with herbs—into an individual roll format, a more modern presentation of the historic Italian hearth bread.

Ingredients

Scale:· 12 servings
  • 1 1/2 cups warm water
  • 2 1/4 tsp active dry yeast
  • 1 tsp sugar
  • 3 1/2 cups bread flour
  • 2 tsp salt
  • 4 tbsp olive oil, divided
  • 1 tbsp mixed dried Italian herbs
  • Flaky sea salt, for topping

Instructions

  1. 1Stir yeast and sugar into warm water; let sit until foamy.
  2. 2Stir in flour, salt, 2 tbsp olive oil, and the herbs to form a wet dough.
  3. 3Let rise 1-1.5 hours, until doubled.
  4. 4Divide into 12 portions, place in a well-oiled pan, and dimple each with fingers.
  5. 5Drizzle with remaining oil, sprinkle with sea salt, let rise 30 minutes.
