The Story Behind It

The Tale of Classic Ciabatta

Story updated

Ciabatta is a relatively modern Italian bread, created in 1982 by baker Arnaldo Cavallari in Veneto, partly as an Italian response to the popularity of French baguettes, aiming to give Italy its own distinctive sandwich bread.

Ingredients

Scale:· 8 servings
  • 1 1/2 cups warm water
  • 1/2 tsp active dry yeast
  • 3 1/2 cups bread flour
  • 2 tsp salt
  • 2 tbsp olive oil

Instructions

  1. 1Stir yeast into warm water and let sit 5 minutes.
  2. 2Stir in flour, salt, and olive oil to form a very wet, sticky dough.
  3. 3Cover and let rise 12-16 hours at room temperature, until bubbly.
  4. 4Turn out onto a well-floured surface and divide into 2 rectangles without deflating too much.
  5. 5Let rest 30 minutes, then bake at 450°F for 22-25 minutes, until golden and hollow-sounding.
