Beef Quesadillas

Ingredients

  • 1 lb ground beef (80/20)
  • 1 tbsp taco seasoning
  • 1/3 cup water
  • 8 flour tortillas
  • 2.5 cups shredded Mexican cheese blend
  • 2 tbsp butter, softened
  • Salsa and sour cream for serving

Instructions

  1. 1Brown the ground beef in a skillet over medium-high heat for 6-7 minutes, breaking it into crumbles.
  2. 2Drain excess fat, stir in the taco seasoning and water, and simmer for 3-4 minutes until thickened.
  3. 3Lay 4 tortillas flat and sprinkle with cheese, then top with the seasoned beef and more cheese, and finish with the remaining tortillas.
  4. 4Butter the outside of each quesadilla lightly.
  5. 5Heat a large skillet or griddle over medium heat and cook each quesadilla for 2-3 minutes per side until golden and the cheese has melted.
  6. 6Cut into wedges and serve with salsa and sour cream.
