The Story Behind It

The Tale of Grilled Beef Kebabs

Story updated

Skewered grilled meat dates back thousands of years across the Middle East, Central Asia, and Mediterranean, with the word "kebab" rooted in Persian and Arabic. Shish kebab specifically is closely associated with Turkish and broader Ottoman culinary tradition.

Ingredients

Scale:· 4 servings
  • 1.5 lbs sirloin steak, cut into 1.5-inch cubes
  • 1/4 cup olive oil
  • 2 tbsp soy sauce
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 red onion, cut into chunks
  • 1 bell pepper, cut into chunks
  • 8 oz mushrooms, halved
  • Wooden or metal skewers

Instructions

  1. 1Whisk together the olive oil, soy sauce, lemon juice, garlic, oregano, salt, and pepper in a bowl.
  2. 2Add the beef cubes and toss to coat, then marinate for at least 20 minutes, or up to 4 hours in the refrigerator.
  3. 3If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  4. 4Preheat a grill or grill pan to medium-high heat.
  5. 5Thread the beef, onion, bell pepper, and mushrooms alternately onto the skewers.
  6. 6Grill the kebabs for 10-12 minutes, turning every few minutes, until the beef reaches your desired doneness and the vegetables are lightly charred.
