Beef Goulash

Ingredients

  • 2.5 lbs beef chuck, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 2 onions, diced
  • 3 cloves garlic, minced
  • 3 tbsp sweet Hungarian paprika
  • 1 tbsp tomato paste
  • 2 cups beef broth
  • 14.5 oz canned diced tomatoes
  • 1 red bell pepper, diced
  • 1 tsp caraway seeds
  • Salt and pepper to taste
  • Sour cream for serving

Instructions

  1. 1Pat the beef dry and season with salt and pepper.
  2. 2Heat the oil in a large Dutch oven over medium-high heat and brown the beef in batches, about 5-6 minutes, then set aside.
  3. 3Add the onions to the pot and cook for 7-8 minutes until deeply softened, then add the garlic and cook 30 seconds more.
  4. 4Remove the pot from the heat briefly and stir in the paprika and tomato paste, coating the onions well before returning to the heat to avoid scorching the paprika.
  5. 5Add the beef broth, diced tomatoes, bell pepper, and caraway seeds, then return the beef to the pot.
  6. 6Bring to a simmer, cover, reduce heat to low, and cook for 1.5 to 2 hours, stirring occasionally, until the beef is very tender.
  7. 7Season with salt and pepper to taste and serve with a dollop of sour cream.
