Crispy Beef and Potato Hash

Ingredients

  • 1 lb ground beef (85/15)
  • 3 medium potatoes, diced small
  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 eggs (optional, for serving)

Instructions

  1. 1Heat 1 tablespoon oil in a large skillet over medium heat and cook the diced potatoes, stirring occasionally, for 12-15 minutes until crispy and golden; remove and set aside.
  2. 2Add the remaining oil to the pan and brown the ground beef with the onion and bell pepper over medium-high heat for 6-7 minutes.
  3. 3Add the garlic and smoked paprika, cooking for 1 minute more, and season with salt and pepper.
  4. 4Return the crispy potatoes to the pan and toss everything together for 2-3 minutes until heated through.
  5. 5If desired, fry the eggs separately and place one on top of each serving.
