The Story Behind It

The Tale of Beef Burrito Bowl

Story updated

The burrito bowl—essentially a deconstructed burrito served without the tortilla—is a modern American fast-casual invention, popularized largely by chains like Chipotle starting in the 1990s-2000s as a lower-carb alternative to the wrapped version.

Ingredients

Scale:· 4 servings
  • 1.5 lbs ground beef (85/15)
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 3 cups cooked white or brown rice
  • 15 oz canned black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • Shredded cheese and lime wedges for serving

Instructions

  1. 1Brown the ground beef in a large skillet over medium-high heat for 6-7 minutes, breaking it into crumbles.
  2. 2Drain excess fat and stir in the chili powder, cumin, smoked paprika, salt, and pepper, cooking for 1-2 minutes more.
  3. 3Warm the black beans and corn in a small saucepan or the microwave.
  4. 4Divide the rice among bowls and top with the seasoned beef, black beans, corn, cherry tomatoes, and avocado.
  5. 5Sprinkle with shredded cheese and serve with lime wedges.
