Beef and Vegetable Stir-Fry

Ingredients

  • 1 lb sirloin steak, thinly sliced against the grain
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 3 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1/4 cup water
  • Cooked rice for serving

Instructions

  1. 1Toss the sliced beef with the soy sauce and cornstarch in a bowl and let sit for 10 minutes.
  2. 2Heat 1 tablespoon of oil in a wok or large skillet over high heat until shimmering, then add the beef in a single layer and sear for 1-2 minutes per side until browned; remove and set aside.
  3. 3Add the remaining oil to the pan and stir-fry the bell pepper, broccoli, and carrot for 3-4 minutes until crisp-tender.
  4. 4Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
  5. 5Return the beef to the pan, then add the oyster sauce, rice vinegar, and water, tossing everything together for 1-2 minutes until glossy and heated through.
  6. 6Serve immediately over cooked rice.
