Beef and Vegetable Stir-Fry

Ingredients
- 1 lb sirloin steak, thinly sliced against the grain
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 3 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1/4 cup water
- Cooked rice for serving
Instructions
- 1Toss the sliced beef with the soy sauce and cornstarch in a bowl and let sit for 10 minutes.
- 2Heat 1 tablespoon of oil in a wok or large skillet over high heat until shimmering, then add the beef in a single layer and sear for 1-2 minutes per side until browned; remove and set aside.
- 3Add the remaining oil to the pan and stir-fry the bell pepper, broccoli, and carrot for 3-4 minutes until crisp-tender.
- 4Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
- 5Return the beef to the pan, then add the oyster sauce, rice vinegar, and water, tossing everything together for 1-2 minutes until glossy and heated through.
- 6Serve immediately over cooked rice.
