Beef and Broccoli

Ingredients

  • 1 lb flank steak, thinly sliced against the grain
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch, plus 1 tsp for the beef
  • 2 tbsp vegetable oil
  • 3 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 1/2 cup beef broth
  • 1 tbsp sesame oil
  • Cooked rice for serving

Instructions

  1. 1Toss the sliced steak with 1 teaspoon cornstarch and let sit for 10 minutes.
  2. 2Whisk together the soy sauce, brown sugar, remaining cornstarch, and beef broth in a small bowl and set aside.
  3. 3Heat 1 tablespoon of oil in a large skillet or wok over high heat and sear the beef for 1-2 minutes per side until browned; remove and set aside.
  4. 4Add the remaining oil and stir-fry the broccoli for 3-4 minutes until crisp-tender and bright green, adding a splash of water and covering briefly to steam if needed.
  5. 5Add the garlic and ginger and cook for 30 seconds, then return the beef to the pan.
  6. 6Pour in the sauce mixture and toss for 1-2 minutes until it thickens and coats everything.
  7. 7Drizzle with sesame oil and serve over rice.
